Description

Apple Pie Chia Overnight Oats: A combination of apples, cinnamon, allspice, and ginger.

Recipe from the cookbook “Oh She glows everyday”, by Angela Liddon

Ingredients

For the overnight oats:

1 cup rolled oats
1 1/2 cups unsweetened almond milk (or any other non-dairy milk) or more as needed
1 Tbsp pure, organic, maple syrup
1 tsp cinnamon
1/2 tsp pure vanilla extract
pinch fine sea salt
2 small or 1 large Honeycrisp apples
3 Tbsp proactive whole black chia seeds
pinch allspice
pinch ginger

Suggested toppings:

dates, chopped
candied ginger, chopped
pecans, chopped
apple, diced
Instructions

In a medium bowl add the oats, maple syrup, cinnamon, vanilla, salt, grated apples, chia seeds, allspice and ginger.
Add the milk and stir. Cover and refrigerate for a minimum of 1 hour to overnight. The mixture will thicken and the oats will soften.
Serve chilled or warm it up on the stove or in microwave portioned into jars or bowls, layering the oats with the diced apple.
Top with suggested toppings or your favorite ones.
Notes

Leftovers will keep in an airtight container in the fridge for a couple days.
